Vegetable Breadcrumbs:
Make your own vegetable breadcrumbs by finely chopping vegetable scraps and drying them in the oven at 100°C (210°F) for about 2 hours. The resulting crispy and flavorful breadcrumbs are an excellent substitute for regular breadcrumbs in your recipes. Vegetable breadcrumbs can be used to coat fish, chicken, or other dishes, and they can be used alone or mixed with regular breadcrumbs to add extra flavor and texture.
Here, we used vegetable breadcrumbs to coat a sole. A mixture of half regular breadcrumbs and half vegetable breadcrumbs offers a tasty and unique variation of the traditional coating.
