INGREDIENTS FOR 10 SERVINGS

10 Beauvais Organic Vegetable Burgers
80 g Sunflower Seeds
400 g Arugula
1 Celery Root
1 dl Olive Oil
Salt and Pepper

INSTRUCTIONS

  1. Toast the sunflower seeds in the oven at 180°C (350°F) for 10 minutes, stirring occasionally.
  2. Peel the celery root. Season with salt, pepper, and a little olive oil and wrap it in aluminum foil. Bake in the oven at 180°C (350°F) for about 1 hour and 30 minutes.
  3. Blend the toasted sunflower seeds with 300 g of arugula and the olive oil to make a pesto. Season with salt and pepper.
  4. Fry the Beauvais Vegetable Burgers in rapeseed oil.
  5. Slice the baked celery root thinly and spread the pesto on the slices.
 Toss the remaining arugula with the remaining pesto and assemble the burger with the pesto-coated arugula.
  6. Sprinkle sunflower seeds on top.
