2 Large Potatoes
1 Hokkaido Pumpkin
5 Carrots
10 Jerusalem Artichokes
5 Beets
1 Bunch of Flat-Leaf Parsley
Olive Oil

INSTRUCTIONS

  1. Boil the potatoes and Hokkaido squash. Mash them, adding a little olive oil, salt, and pepper.
  2. Peel and dice the carrots, Jerusalem artichokes, and beets. Fry them in a pan.
